This is a very colorful and pretty slaw that saves well and has a slight kick.
2 C peeled jicama, cut into thin matchstick strips.
1 ea small red, yellow and orange sweet peppers, cut into thin matchstick strips. (about 1 1/2 C).
1 small red onion, thinly sliced and halved.
In a large salad bowl combine jicama strips, sweet pepper strips and onion slices. Prepare Jalapeno Dressing. Pour dressing over jicama mixture, tossing to coat. Cover and chill at least an hour, stirring occasionally.
1/4 c olive oil
1/3 c snipped fresh cilantro
2 T red wine vinegar
1 fresh jalapeno chile pepper, seeded and finely chopped
1 clove garlic, minced
1 t sugar substitute
1/8 t black pepper
Dash each of salt and cayenne pepper.
